Description

Made by grinding finger millet (Eleusine coracana)—known as ragi (Kannada/Telugu), nachni/Mandua (Hindi), koorai (Tamil), and madua (Bengali).

Naturally gluten‑free, with a coarse, earthy taste—stronger than wheat.

Ragi Kanji (Porridge):

Mix flour with water, cook while stirring until smooth and “glassy”—serve with milk & sugar or buttermilk.

Ragi Mudde/Sankati:

Cook flour with boiling water, knead into dough, form balls—served with sambar or curry.

Dosa & Rotis:

Instant dosa: Ragi flour + rice flour/spices → pancake batter.

Ragi roti: Made from flour + hot water, knead & cook like chapati.
